Tanya’s Favorite Warm Chicken Salad With Feta

Simply the most satisfying, healthy warm chicken salad I have ever had. My husband and I created this recipe together by blending so many of the things we both love into one dish. I love warm foods more than a cold salad and he loves a salad, period. I happen to love seeds in a salad, and he is a sucker for apples. In this salad we combined  ingredients we both love to create the salad of our dreams. Did I mention that I am actually to prepare this dish without burning it? It’s true…

HERE IS THE RECIPE!

INGREDIENTS:

– good portion of arugula salad
– two helpings of sunflower shoots
– two helpings of broccoli and carrot slaw
– half a yellow pepper sliced
– half an avocado cut in cubes
– quarter of an apple, cut in half and sliced
– half a cucumber, cut in half and sliced
– a sprinkling of pumpkin seeds and sunflower seeds
– a third of a bunch of chives thinly diced
– 3 oz of a good feta cheese crumbled
– two table spoons of balsamic white wine or apple cider vinegar
– 3 tablespoons of olive oil
– 2 pinches of fine sea salt
– 2 chicken breasts salted and peppered and sautéed in olive oil

Combine all of this in a bowl save for the chicken breast. Once you have lightly sautéed the chicken breast in olive oil, you pour the contents from the pan over the already mixed salad ingredients and toss. Add the apple cider vinegar last and toss again. I personally like to add the warm olive oil from the pan with the chicken as it makes the salad even warmer when it hits the tummy.
